I prepared Eggless Chocolate Cake on my first blog anniversary. Along with Home made Chocolates, Eggless Chocolate Cake made my day. This Vegetarian Cake comes with Chocolate Icing and Cherry plus Almond toppings. Here is the recipe for the cake. I will post the recipe for Home made Chocolates soon.

Like I did for my earlier post on Eggless Vanilla Cake, I have tried baking this cake in my Microwave Oven in Convection mode. When I prepared my first Eggless Cake, I used Glycerin so that the cake comes out fluffy. But here for the Eggless Chocolate Cake, I have tried making the cake without using Glycerin and still the cake came out soft and fluffy. Make sure you never skip the Condensed Milk though. Condensed Milk gives real softness to the cake.

Eggless Chocolate Cake Ingredients:

  • Maida/All Purpose Flour – 160 Gms
  • Condensed Milk/Milkmaid – 260 Gms
  • Baking Powder – 1-1/2 tsp
  • Cocoa Powder – 40 Gms
  • Unsalted Butter or Margarine – 100 Gms (I use Butter)
  • Vanilla Essence (dry or liquid) – 1/2 tsp (optional)
  • Milk as required – 200 ml

Time to Prepare : 1 hr

How to Make Eggless Chocolate Cake:

Beating Process –

1. Mix Maida or All Purpose Flour, Baking Powder and Cocoa Powder. Sieve the mixed ingredients thrice before starting the beating process.

2. Beat the Unsalted Butter or Margarine (I used my own home made Butter) and Condensed Milk in an Egg Beater or with the help of whisk to prepare smooth paste. If you use a whisk or spatula instead of an Egg Beater, you may have to beat lot more than what you would with an Egg Beater – at least for 10 to 15 minutes. The beating process in beater should be in a single direction.

3. Divide the sieved Maida, Baking Powder and Cocoa Powder mixture (from step 1) into 3 proportions and add each one of these proportions slowly, bit by bit, while you keep beating the batter.

4. Now add Milk and Vanilla Essence slowly and beat again. If the batter is too thick, add extra Milk. The batter should come out as thick as an Idly or a Dosa batter.

Baking Process using Microwave in Convection Mode –

1. Place the small grill inside the oven (which comes with the oven) and preheat Microwave oven in Convection mode for about 9-10 min.

2. Take the cake tin, grease the tin with butter well. Try to dust a single tsp of Maida all over the tin uniformly. Keep aside.

3. Fill about half or 3/4 of the Cake Tin with the Cake batter from the above by pouring the batter into the tin. Allow the Cake batter to settle in the Cake tin by patting and shaking the Cake tin so that the batter settles well inside the tin. The batter inside the Cake tin this way becomes free of air particles inside itself.

4. In the Microwave Oven, bake the Cake in Convection Mode at 180 Centigrade for about 30-40 minutes until the Cake turns slightly golden brown. It is not possible to bake Cookies and Cakes in Basic or Grill mode of Microwave Oven. The baking time may take a little less or more time and hence keep watching. Remove the baked Cake from Microwave Oven. Once removed, make sure you check with a wooden stick to see if the Cake is baked well by piercing the wooden stick in the middle of the Cake. If the Cake is not baked fully, the Cake tends to stick to the wooden stick. If yet to be baked, heat the Cake in Microwave in Convection Mode for further 15 min or so and bake again.

5. Once the cake is baked, allow the Cake to cool completely in the Cake tin itself for about 2 hrs. With this, the Eggless Chocolate Cake is ready to be served.

6. Once cooled, remove Eggless Chocolate Cake from from the Cake tin and place it on a plate. Now cut the Cake’s top layer carefully with knife, make the top layer as flat and uniform as possible so that the Cake Icing can be spread well on the Eggless Cake.

Decoration or Icing Ingredients:

  • Butter – 1/2 cup or 150 gm
  • Icing Sugar or Normal Sugar Powder – 2-3 Tbsp
  • Cocoa Powder – 2 tsp
  • Cherries
  • Almonds
  • Chocolate gratings – as required

Decoration or Icing Process on a Cake –

1. Have a bowl, add Icing sugar, Cocoa Powder and Butter and beat it slowly using whisk or spatual till you get the proper spread and consistency of Icing. For this cake preparation, I have used Chocolate Icing. This Icing goes well with Chocolate Cake.

2. Spread the Icing on all sides of Eggless Chocolate Cake with the help of spatulla and/or knife.

3. Sprinkle grated Chocolate on the Icing and decorate with few Cherries and Almonds.

Keep the Eggless Chocolate Cake prepared in the refrigerator and allow to chill for 1-2 hr. Once chilled, cut the Eggless Chocolate Cake in desired shape.

Your home prepared Eggless Chocolate Cake is now ready to be relished.

    • Siri – I have not mistaken Glycerin with Vinegar here. Here, I was referring to the Glycerin used while baking the
      Eggless Vanilla Cake. Glycerin gives fluffiness and softness to the cake. Since I tried to bake these cakes in microwave convection mode (instead of using regular baking oven – OTG), I was concerned about softness of the cake. Hence, I used Glycerin to make the Vanilla cake turn soft. But with Eggless Chocolate Cake, I tried to be a little bolder and baked without using Glycerin just to see how soft the chocolate cake turns out. Fortunately, even without Glycerin, the Eggless Chocolate Cake came out soft and fluffy. So, I can say now that you can skip the Glycerin in any of these Eggless Cakes if you would like to.   1. Hi Hema.. I’d never experimented a cake or anything with my new microwave so i need ur help with my cake. There is microwave + convection combi option in my microwave with maximum temp. of 220C for 60min at max, also power settings of 100w to 600w. These power settings r confusing me and should i use only convection mode or is it ok to use above combi mode?
    I wanna impress my friend so plz help me

    • Puneet – Do use the convection mode only and set the temperature to 180 C and bake for 30-40 min. Do not use the combi mode – Microwave + Convection mode. Using combi mode makes the chocolate cake to bake quickly on the exterior while the inner content still remains unbaked. Hope this helps.

  2. hi hema…..liked ur cake receipes.they are more or less the same as i make at home with the difference that i get them baked in an oven rather than a microwave.but i always bake the cake at 150 c for 50 mins.it seems the interior remains unbaked somewhat..please help me out dear….

    • Kavita – The regular recommended temperature is 180 C about 30-40 min to bake the Chocolate Cake. It almost takes 40 min to bake the cake, but do make sure you once check once around 30 min to see if the cake is baked.

      A number of things can make Cake to bake faster on the outside while leaving the inside half baked. Below are the points I noted while baking the Cake.

      a) As you can guess, the temperature matters when you bake the cake. If temperature is high, i.e., more than 180 C, then the cake bakes fast on the exterior, but inside it remains unbaked.

      b) If excess sugar is added to Chocolate Cake batter, the Cake bakes fast on the exterior.

      c) Ensure that both the coils are ON in the Oven. This helps bake the Cake evenly.

      d) If the Cake batter is too thin (or say bit watery) then it takes more time to bake the Cake and hence be patient.

    • Trisha – There are 3 options in my Samsung Microwave Oven.

      1. Microwave Mode
      2. Grill Mode
      3. Convection Mode.

      In pure Convection Mode you may use aluminum moulds, silicon moulds and also the grills. It should not burst, but do not try to keep the aluminum mould when you are using Grill or Microwave mode.

      If you buy a Convection Oven, you can try ‘n’ number of recipes like Pizzas, Cakes, Cookies, bakery style Buns, Cutlets etc. You can also cook Rice, Vegetables, prepare Idlis, Pulao, Sabzis etc.

    Thanks for the above recipe. I would like to try on my Microwave. I have Electrolux Microwave EM20EC80SL model. Any idea how to adjust temperature in it because there is no option for it.

    The milk should be cooled or refrigerator cool?

    I am totally very confused about the power and temperature to be set for baking in my oven.As per ur recipe, i tried but my cake got burned from the top and became hard.
    Please help me out. Your recipe is perfect. but I guess my microwave settings are going wrong from my side.

    • Mrunmai – I am sorry to hear the top portion of the cake got roasted and became hard. For my cake preparation, I use temperature setting of 180 degree Celsius and bake for 30 min in Convection Mode on my Samsung Microwave Oven. I keep the cake preparation in the lower rack, specially if I feel that the top portion will get burnt when using the high rack grill in convection mode. Since posting the Eggless Chocolate Cake recipe, I have tried baking other types of Cakes and they have come out well when using low rack grill.
      Still, I would advise you to read through the manual for exact controls and settings for your oven. My microwave manual came with a separate section with instructions for baking. It may also be a good idea to call the Godrej customer care and ask for a demo of the oven for baking cakes/pizza/cookies. Companies often arrange for such demos at a central location in metros and sometimes send their representatives to your home to help you with the Microwave oven settings.
      Of course, nothing like trying out multiple times until you obtain that perfect cake of your dreams. That’s how I learnt at least. Hope you will overcome these hurdles soon and will have great fun baking.

    I will surely call Godrej Customer care for Demo on specially Baking settings. As the Oven has Instacook mode for Cake Baking, but it didn’t worked out.

    Unfortunately, I too faced the same prob as ‘Mrunmai’ (with Godrej oven): The oven auto-switched off in 5 mins coz of overheating and the cake was roasted on the top, the rest was a bit hard too (but tasted right :))…

    What are the causes of the top becoming too hard?
    Also, do I not need to put sugar??

  12. Hi Hema, i have tried making the eggless chocolate cake in OTG at 180 degrees C for 30 min. it was hard from outside but undone from inside. i think its because of the inappropriate measurements of the ingredients. Can you tell me an easier way to measure them in grams?

    • Yes, Renu, you can use the Aluminium bowl. Aluminium can be used in Microwave oven in Convection mode only and NOT in the other modes like the Normal or Grill mode of Microwave. I have prepared many types of Cakes and Muffins using Aluminium bowls.
