As I make Salad daily for lunch, there is a need for different variety of dressings in order to boredom. Fruits can be consumed as it is. Some vegetables like Carrot, Onion, Cucumber and Capsicum can also be devoured raw. But potato needs to be cooked for any dish. Today I made Healthy Salad with Rosemary Dressing for lunch. For this I used some of fresh fruits, raw vegetables and boiled potatoes along with broccoli.
I did sauteing for potatoes and Broccoli separately since the later one needs different method. To know How to Clean and Sauté Broccoli, just click the link here. Adding boiled and sautéed potatoes to the Salad, gives a different taste. I always suggest you to use fresh potato which looks mud coated; this gives you good minerals and avoids gastric problems. This healthy Salad is prepared using fresh Rosemary dressings, as it not only gives good taste, also enhances the aroma in it.

This Salad recipe is little lengthier, as we need to boil Potato and sauté the same. Also the Broccoli needs to be cleaned and sautéed separately. Just cut the vegetables and fruits to cube shaped pieces. Prepare dressing by adding ingredients under Rosemary dressings list; add the same to the cut fruits and veggies including sautéed ones. Mix well. Remember to add the dressing just 15 minutes before serving. The dressing should marinate properly before serving. Don’t keep this Healthy Salad with Rosemary Dressing for more time, as it leaves the water content in it. Finally the end result of this Healthy Salad with Rosemary Dressing is really amazing.

Healthy Salad with Rosemary Dressing Ingredients:
- Apple – 1/2
- Pineapple – 1/4
- Carrot – 1/2
- Potatoes – 1 small size
- Broccoli – 7 to 8 florets
- Red Bell Pepper – 1/4
- Lettuce
- Olives – 4
- Tomato – 1/2 deseeded or Cherry / Pearl Tomatoes – 3
- Olive Oil – 2 tsp of sautéing Potato and Broccoli
- Jeera Powder / Cumin Seeds Powder – 1/2 tsp
- Salt
Healthy Salad with Rosemary Dressing Ingredients:
- Olive oil – 1 tsp
- Honey – 1 tsp
- Salt
- Fresh Rosemary – 2 strips (can replace with dried ones)
- Lemon Juice – 1/2 tsp
- Mustard Sauce – 1 Tbsp
Preparation Time: 10 minutes
Marinating Time: 15 minutes
Serves: 3
How to Make Healthy Salad with Rosemary Dressing:
1. Boil the Potato for 4 whistles. Peel the skin and cut it into cubes. (You can cook a single Potato with other vegetables while cooking for sambar or curry). Sauté the boiled Potato cubes in a tsp of Olive Oil, sprinkle salt and Cumin Seeds Powder. Sauté till Potatoes changes to golden colour.

2. In a tsp of Olive Oil, with little salt till sprinkled, sauté the Broccoli florets till it shrink and change its colour. Check How to Clean and Sauté Broccoli post.

3. Chop and Saute the Red Bell Pepper with little Olive Oil and Salt till it changes its colour.

4. Chop and cook the Carrots in water in microwave or in vessel parboiled. It should be half cooked.
5. Chop all other vegetables and fruits like, Apple, Pineapple, Carrot, Olives, Lettuce and Tomatoes.

6. Add all the chopped, boiled, sautéed Vegetables and fresh fruits in a big salad mixing bowl. Mix once and keep ready.
How to make Rosemary Dressing:
a. Chop the Rosemary into very fine pieces and transfer to a bowl. Add Olive Oil, Lemon Juice, Honey, Mustard Sauce and Salt.

b. Whisk it properly; ensure that it is mixed well before adding to the cut vegetables and fruits.
How to Proceed:
1. Take the salad mixing bowl containing chopped vegetables and fruits. Add the Rosemary Dressing to it and mix well. Remember that you should add the dressing just before 15 minutes of serving. It should marinate properly. If it is kept more than the mentioned time, the vegetables and fruits will emit water content in it.

2. After Marinating, the Salad is ready to be served. Use immediately and do not refrigerate.
