Based on years of my experience, watch the video to obtain the right texture, shine and taste when you make the popular 7 Cup Burfi. Step-by-step instructions in Kannada with English subtitles.

I have been making 7 Cup Burfi since my college days, prepared it at least 25-30 times and have experimented a lot with it. Follow the instructions in the video carefully. Otherwise, if you are inexperienced, Burfi can turn out to be hard, powdery or too soft, Halwa-like.

Ingredients:

  • Bengal Gram Flour or Besan – 1 Cup
  • Milk – 1 Cup
  • Ghee/Clarified Butter – 1 Cup
  • Grated fresh Coconut – 1 Cup
  • Sugar – 2 and 1/4 Cup
  • Cardamom Powder – 1 tsp

Method:

1. To a bowl, incrementally add 1 Cup of Besan or Bengal Gram Flour and 1 Cup of Milk in batches and mix well with the help of a whisk.

2. To a big thick bottom pan, add 1 Cup Ghee/Clarified Butter. Do not use a non-stick pan.

3. Add 2 and 1/4 Cups of Sugar.

4. Add 1 Cup fresh grated Coconut.

5. Now add the prepared Besan/Gram Flour-Milk mixture to it.

6. Mix everything once and switch on the flame.

7. Mix everything in medium flame till the Sugar dissolves.

8. Mix continuously without breaks.

9. The mixture will slowly start to thicken after about 10 minutes.

10. Scrape the sides from the spatula move them to the center and continuously mix everything.

11. Try to mix in low flame, or else the bottom may get burnt.

12. It takes a minimum of 30-35 minutes to prepare this Burfi.

13. Now add 1 tsp Cardamom powder and mix well.

14. To know if you have the right consistency, scrape the sides of the pan. The scraped sides should be thick and of the regular Burfi consistency that you see at the end of the preparation.  Also, the mixture in the centre of the vessel will become one big lump.

15. Now pour this mixture immediately into Ghee greased tray. Shake the tray to set the mixture to an even height across the tray.

16. Leave the mixture to cool at least for 30 minutes and then cut with a knife to the desired shape.

17. Once it has cooled completely, separate each 7 Cup Burfi.
