Walnut Fudge

Walnut is a good dry fruit which is rich in protein, potassium, fiber and zero in cholesterol. So a sweet made with walnut can be consumed more than one without worrying. Little bit of effort goes in making this Walnut Fudge. But I am sure you will enjoy the results of your hard work. Your family will love this Walnut Fudge and you will be praised immensely. Follow these steps to make walnut fudge. Once you finish this fudge you will definitely say that this is an easy recipe.

Walnut Fudge Ingredients :

  • Cocoa powder – 3 tsp
  • Unsalted Butter – 1 cup
  • Walnut – 200 gm
  • Sugar – 1 cup
  • Milk powder – 1 cup
  • Water – 1 and 1/4 cup

How to Make Walnut Fudge :

  1.  Mix Milk Powder and Cocoa Powder in a bowl. Keep aside.
  2. Powder Walnuts moderately in a mixer grinder or make tiny pieces using hand.
  3. In a pan, add Sugar and Water. Heat and prepare sugar syrup like you would for say, Gulab Jamoon. When the sugar syrup turns little sticky, add butter to it until the butter melts. Once the butter melts, add Milk Powder and Coco Powder mixture from Step 1 to the syrup.
  4. Next add Walnut pieces from Step 2 to the syrup. Stir this mixture well until it becomes thick and separates out from the bottom of the pan.
  5. Pour the paste on a plate greased with Ghee (Clarified Butter). Sprinkle little Walnut powder on it and upon cooling, cut into diamond shape as seen in the image.

    I did try out the Walnut Fudge. But I had to use cashew nuts instead of walnuts. It came out very well. And it was delicious and soft.

    However, once I put in the dry ingredients to the butter and sugar mixture, the butter separated from the rest of the mixture. So I drained the liquid butter and put only the mixture on to the prepared tray. Just wanted to check with you is it normal for the butter to separate? (Thought it’s better to use unsalted butter just something that I thought I should share)

    • Hi Melb. Sorry could not reply you immediately. It is a festival season in India, and I was away.

      Always use unsalted butter to prepare Walnut fudge or any other sweets. Once the Sugar syrup is ready, add unsalted butter to the syrup. Once the butter melts (heat in low flame until butter melts) add dry ingredients immediately. If you leave butter to itself longer than that, then butter turns to Ghee or Clarified butter. So by following this step butter never separates from the mixture. I think you have used salted butter, so it has separated from the sugar syrup.

    Actually, I tried both with salte and unsalted butter. But both times the butter seperated. Think I kept the butter too long before I put in the dry ingrediants.

    But at the end the fudge was really good. My family and friends loved it. Next I’m going to try the Stuffed Rotti 🙂
