Vegetables are bundle of fiber, protein, vitamin, minerals and carbohydrates. Hence they form the building blocks of an healthy human being. I therefore give you a vital recipe to keep your family healthy. Vegetable Paratha, the recipe I am giving here is a non-stuffed Paratha. Just mix all the ingredients with the Wheat Flour and little water to prepare dough. Keep it aside for 15-20 min and roll it like a thick chapati. When you do not have any vote for plain Chapati, you can prepare this easy Vegetable Paratha. Here I have used only grated Carrot, Onion and Cabbage. One can add more vegetables like Mooli or Radish to this Vegetable Paratha which enhances good taste to the Paratha. This Paratha can be served with Curd mixed with Dahi Vada masala powder which is easily available in Market(I use Everest masala).
Vegetable Paratha Ingredients:
- Grated Carrot – 1 Tbsp
- Grated Cabbage – 1 Tbsp
- Wheat flour – 1 and 1/2 cup
- Chopped Coriander leaves / Cilantro – 2 tsp
- Onion – 1
- Garam Masala Powder – 1/2 tsp
- Red Chilli powder – 1/2 tsp
- Salt
How to Prepare:
Cut the Onions and grind it in a mixer grinder and prepare a smooth Onion paste.
In a mixing bowl, add grated Carrot, grated Cabbage, Coriander leaves, Red Chilli powder, Salt, Onion paste and Wheat flour. Knead well all the ingredients and prepare a smooth dough like the Chapati/Paratha dough. If needed, add a little water while kneading.
Keep the dough aside for half an hour. This will help Vegetable Paratha to become smoother upon baking.
Divide the Paratha dough into small balls of suitable size and roll it out and cook on a tava on medium flame like just like your regular Parathas/Chapati. Use Ghee if you like.
Serve Vegetable Paratha with Coconut Chutney. The Paratha also tastes great with Chutney powder and Curd combination.
