Carrot Cheese Paratha

Carrot is high in vitamin A and has lots of water content in it. Carrot helps to improve the eye sight especially in growing children. We can prepare varieties of Parathas using grated carrot. You can prepare this simple Carrot Cheese Paratha and relish it with plain curd or with pickle, as the stuffing has spicy ingredients in it.

Many people love to have different types of Parathas, especially children. Here I am presenting one of the types called the Carrot Cheese Paratha. It turns out that this Paratha tastes great. If you do not prefer to have Cheese for health reasons, you can forego Cheese and go for just plain Carrot Paratha. As always, you can prepare varieties of Parathas by varying the stuffing.

Carrot Cheese Paratha Ingredients:

  • Carrot Grated – 300 gms (approx. 2 medium sized carrot)
  • Cheese – 50 gms
  • Coriander leaves chopped – 1/2 cup
  • Chilli Powder – 1 tsp
  • Garam Masala or Paratha Masala – 3/4 tsp
  • Carom Seeds – 1/2 tsp
  • Salt

Paratha Dough Ingredients:

  • Wheat flour – 2 cup
  • Bengal Gram (Besan) flour – 2 tsp
  • Rice flour – 2 tsp
  • Salt
  • Oil – 1 tsp

How to Prepare:

1) Paratha Dough Method:

In a bowl, add Wheat flour, Bengal Gram flour, Rice flour, Salt and Oil. Mix all the ingredients well, add water to this flour mixture and prepare dough just like the regular Chapati dough. Keep aside for about 30 minutes.

Note: Adding different flours helps Paratha to turn soft and taste better.

2) How to prepare Carrot Cheese Paratha Filling or Paratha Stuffing :

Squeeze out the water from grated Carrot completely by pressing between both palms. Mix all the Paratha ingredients- Grated Carrot, Cheese, Coriander leaves, Chilli Powder, Garam Masala or Paratha Masala, Carom Seeds and Salt with your hand. The Paratha filling is now ready.

3) How to prepare Paratha:
Knead the dough from Step 1 for few seconds. Divide and shape the Paratha dough into round shaped balls. Roll it out to the size of a small-sized Puri/Poori. Place 2 Tbsp of Paratha filling/stuffing (Carrot Cheese filling) in the centre. Raise the sides to cover the filling. Flatten and roll out into a medium thick Paratha by dusting occassionally in the Wheat Flour.

Alternate method to roll out Paratha:

At times when Paratha dough or the Paratha filling turns a bit watery or too soft, the filling may come out of the Paratha Dough while rolling the stuffed dough and you may not be able to roll out the Paratha Dough comfortably. Then try this – Take 2 small round sized dough balls. Roll those 2 balls into small Puri sized dough rolls. Spread evenly the filling/stuffing on one of the rolled out dough and then place the other rolled out dough on top to cover the one below. Then roll it out into medium thick Paratha.

4) Cook it on a hot griddle or Tawa and bake the Carrot-Cheese Paratha on both the sides by applying enough Ghee till the Paratha turns crisp.

Serve great tasting Carrot Cheese Paratha hot with Coconut chutney.

  1. i would really love it if you could let me know as to whether i can use aluminium cake moulds available in the market in a convection microwave, and is it necessary that i use only borosil glass vessels in the microwave mode. please let me know about the suitability of different vessels for use in the microwave

    • Lakshmi – Thanks for asking about microwave cooking. Let me explain how I do microwave cooking. You may already know some of this and I will try to explain whatever little I have tried. I own a Samsung Microwave Trio version. In this type of microwave oven, there are 3 modes of cooking – the default Microwave mode, Grill mode and the Convection mode.

      In the Microwave mode, you can reheat the food, cook the vegetables and also prepare Sabzis of soft vegetables. One can also “fry” the Papads in Microwave mode – helps avoid using oil for frying.

      In Grill mode, I can prepare Pizza, Sandwiches, Cutlets etc. The oven has 2 grills, one for preparing Pizzas or Sandwiches which need more heat (the height of the stand is such that the grill is very near to the stove on the top) and other is a smaller grill (a little away from the stove) used for dishes like Cutlets which are heated less. I have tried only the Pizzas and Sandwiches in the Grill mode.

      In Convection Mode, you can prepare Cakes and Cookies. In this mode, I was able to prepare only Cakes of 2 types of Eggless variety. I have not tried Cookies in Convection Mode and plan to do so soon.

      About the kind of vessels to use in Microwave oven –

      In Microwave mode: I use the plastic vessels specifically designed for microwave cooking. The best brand of plastic microwave cookware that I am aware of is the “Cutting Edge” which has quite a few varieties of microwave cooking vessels. You can use Borosil glass vessels for cooking the vegetables and preparing dishes or Sabzis. But Borosil vessels can be expensive. I did get a few vessels for free when I purchased my Microwave.

      In Grill mode: For preparing Pizzas, Sandwiches, Cutlets etc. in Grill mode, I use the grills that came free with my purchase of Microwave oven. Samsung also provided one Crust plate (black coated plate) for preparing Pizzas, but this plate is not a must for preparing Pizzas.

      In Convection mode: I have explained how to prepare Cakes in convection mode in my Eggless Vanilla Cake recipe. It is better to use Aluminium vessels to prepare Cakes. I have not tried using Borosil vessels for preparing Cakes. Cakes come out good in Aluminium vessels and take less time to cook.

    Really thanks a lot for explaining the functions of microwave oven which was very useful. Even I have the Samsung trio oven. I would like to grill a cutlet. 2 grill racks are provided when we purchased the oven. So prepare the patties and place on top of it and select grill option alone, will it works. Please le me know.
    If possible please do send me the vanila cake receipe whhich we can bake using oven.
    I need to clarify can aluminium cake maker can be used in Microwave. I was not aware of this. Please clarify.
