India has variety of rice recipes. If you just change one vegetable in the process, it gives you entirely new taste and a new recipe. It is customary in South India to make Chitranna as one of the dishes for lunch during festivals. Now days since we have fast forwarded life style and most of them carrying packed lunches, Chitranna has become more common dish. Same type repetition will make eating boring. So, one need to keep modifying the regular recipes. In olden days when few vegetables were available moms used to prepare nimbu chitranna. With modern technology and concept of import, we get lot of vegetables which are not grown in our surroundings. Here I have given you the recipe for Capsicum Rice or Chitranna. Most of you who know to cook chitranna capsicum is just an addition. For freshers this recipe is very simple. You need to cut Capsicum, cook rice and make vaggarane {seasoning}. That’s it! Capsicum Rice / Chitranna Ingredients:

  • Rice – 1 cup
  • Chopped Capsicum / Bell Pepper – 1 big sized (deseeded)
  • Green Chillies – 2
  • Mustard Seeds – 1/2 tsp
  • Urad dal / White Lenthils – 1/2 tsp
  • Groundnut / Peanuts – 10-15
  • Curry leaves – 8-10
  • Turmeric powder – 1/4 tsp
  • Coriander leaves / Cilantro
  • Coconut grated – 2 tsp
  • Sugar – 1/4 tsp
  • Lemon Juice or Nimbu Juice – 1 tsp
  • Oil – 3 tsp
  • Salt

How to Prepare:

  1. Cook 1 cup of Rice with 2 cups of water in a pressure cooker.
  2. Chop the Green Chillies. Keep them aside.
  3. Remove cooked Rice from the pressure cooker; spread the Rice on a dinner plate and allow the Rice to cool.
  4. In the frying pan, heat Oil. Add Mustard seeds; once the seeds splutter, add Urad Dal. Once the Dal ingredients turn golden brown, add Groundnuts and fry for about a minute until the nuts change color.
  5. Drop Curry leaves into the pan and fry for a minute more. Add chopped Green Chillies and fry them for a minute.
  6. Next add chopped Capsicum, Turmeric powder and fry until the Capsicum pieces are cooked. When Capsicum pieces are cooked, add Salt and Sugar and mix well.
  7. Now add cooked Rice and and mix well. Then add Lemon/Nimbu Juice, grated Coconut and mix well.
  8. Garnish with Coriander leaves.

Capsicum Rice or Chitranna is now ready to serve.

    • Nivedita – Thanks for pointing this out. Reference to Onions was a mistake. I do not use Onions for Capsicum Rice / Chitranna since the distinct flavor of Capsicum that this dish is trying to capture will go away if Onions are added to this preparation. Hope this helps. I have removed the reference to Onions from the recipe.
